  • 8 chicken drumsticks
  • 120ml/4fl.oz soy sauce
  • 60ml/2fl.oz mirin (Japanese sweet rice wine)
  • 60ml/2fl.oz sake (Japanese rice wine) or dry white wine
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon corn flour
  • 1 tablespoon water
  • Sesame seeds, for garnish
  • Sliced green onions, for garnish

  1. In a small saucepan, combine the soy sauce, mirin, sake, brown sugar, minced garlic, and grated ginger. Bring the mixture to a simmer over medium heat, stirring occasionally, until the sugar has dissolved.
  2. In a separate bowl, mix together the corn flour and water.
  3. Gradually pour the corn flour mixture into the simmering sauce while whisking constantly. Continue to cook for 1-2 minutes, or until the sauce has thickened slightly.
  4. Remove the teriyaki sauce from the heat and let it cool to room temperature.
  5. Place the chicken drumsticks in a large resealable plastic bag and pour the cooled teriyaki sauce over them. Seal the bag and marinate in the fridge for at least 2 hours, or overnight for best flavour.
  6. Preheat your barbecue to medium heat.
  7. Remove the drumsticks from the marinade and discard any excess marinade.
  8. Place the drumsticks on the barbecue and cook for 20-25 minutes, turning occasionally, until the chicken is cooked through and juices run clear.
  9. Remove the drumsticks from the barbecue and transfer them to a serving plate.
  10. Garnish with sesame seeds and sliced green onions before serving.
