Grilled pineapple with cinnamon sugar glaze

Savour the tropical flavours of summer with this mouth-watering grilled pineapple dessert, glazed with a delightful cinnamon sugar mixture for a sweet and spicy kick.

Ingredients

  • 1 ripe pineapple, peeled, cored, and sliced into rings
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • Vanilla ice cream, for serving (optional)
  • Fresh mint leaves, for garnish

Directions

  1. Fire up the barbecue.
  2. In a small bowl, combine the brown sugar, ground cinnamon, and a pinch of salt to create the cinnamon sugar glaze.
  3. Place the pineapple rings on a baking sheet or large plate, and sprinkle both sides generously with the cinnamon sugar mixture, pressing gently to coat.
  4. Place the pineapple rings on the barbecue for 2-3 minutes per side, or until caramelised grill marks appear and the pineapple is heated through.
  5. Remove the grilled pineapple from the barbecue and transfer to a serving plate.
  6. Serve the grilled pineapple rings hot, either on their own or topped with a scoop of vanilla ice cream for an extra indulgent treat.
  7. Garnish with fresh mint leaves for a pop of colour and freshness.
