Grilled garlic butter prawn skewers

Succulent prawn skewers infused with aromatic garlic butter, perfectly charred on the barbecue for a mouth-watering experience.

Ingredients

  • 500g/17.5oz large prawns, peeled and deveined
  • 4 cloves garlic, minced
  • 60ml/2.5fl.oz melted butter
  • 2 tablespoons chopped fresh parsley
  • 15ml/0.5fl.oz lemon juice
  • Salt and pepper, to taste
  • Lemon wedges to serve
  • Wooden skewers, soaked in water for 30 minutes

Directions

  1. Fire up the barbecue.
  2. In a small bowl, mix together the minced garlic, melted butter, chopped parsley, lemon juice, salt and pepper.
  3. Thread the prawns onto the soaked wooden skewers.
  4. Brush the garlic butter mixture over the prawns, coating them evenly.
  5. Place the skewers on the barbecue and cook for 2-3 minutes per side, until the prawns are pink and opaque.
  6. Remove the skewers from the barbecue and serve hot, garnished with additional chopped parsley and lemon wedges.
