  • 80ml/3fl oz olive oil
  • 100g/3.5oz grated cheese (such as Gruyère or Emmental)
  • 100g/3.5oz cooked ham, diced
  • 1 medium courgette grated
  • 1 red sweet pepper, diced
  • 100g/3.5oz pitted olives, sliced
  • Salt and pepper, to taste

  1. Preheat your oven to 180C/160C fan/350F/gas mark 4 and grease a loaf pan or cake tin.

  3. In a separate bowl, beat the eggs lightly with a fork.
  4. Add the milk and olive oil to the beaten eggs and mix well.
  5. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
  6. Fold in the grated cheese, diced ham, grated courgette, diced sweet pepper, and sliced olives. Season with salt and pepper to taste.
  7. Pour the batter into the prepared loaf pan or cake tin, spreading it evenly.
  8. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the centre comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
