Banana Bread

  • 3 ripe bananas (about 300g/10.5oz), mashed
  • 150g/5oz granulated sugar
  • 2 large eggs
  • 80ml/3fl oz vegetable oil
  • 60ml/2fl oz milk
  • 1 teaspoon vanilla extract
  • 250g/9oz plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Optional: chopped nuts or chocolate chips (about 100g/3.5oz)


  1. Preheat your oven to 180C/160C fan/350F/gas mark 4. Grease a 23×13 cm/9×5 inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, sugar, eggs, vegetable oil, milk, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. If using, fold in the chopped nuts or chocolate chips until evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the centre comes out clean.
  8. Remove the banana bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Once cooled, slice and serve the banana bread.
