  • 50g/2oz melted butter
  • 225g/8oz cream cheese, softened
  • 250ml/9fl.oz double cream
  • 50g/2oz icing sugar

  • 2 tbsp caster sugar

[/recipe-ingredients] [recipe-directions]
  1. Mix the crushed biscuits with melted butter until combined. Press into the base of a trifle dish or individual glasses, creating a firm layer.
  2. In a small pan, heat the red berries with caster sugar over medium heat. Stir until berries break down and form a thick sauce. Allow to cool, then layer over the crushed biscuits.
  3. In a bowl, whip the cream cheese, double cream, icing sugar, and vanilla extract until smooth and thick. Spoon or pipe over the red berries, spreading evenly.
  4. Top with fresh berries and chocolate shavings. Chill for 1 hour before serving for best results.
